Hearty Vegetable Beef Soup

Easy to prepare, healthy to eat
  • 1 lb. ground beef
  • 1 medium onion
  • 2 stalks celery
  • 3 small potatoes
  • 32 oz. beef broth
  • 14.5 oz can diced tomatoes
  • 1 bag frozen mixed vegetables
  1. Brown the ground beef in a large pot. Let cooked meat drain on paper towels while washing the pot to remove excess fat. Dice onion and celery and let simmer in the clean pot. Add carton of beef broth and can of tomatoes. Dice potatoes and add to pot. Then add frozen vegetables. Simmer until vegetables are tender.
